Geek Fit Food Journal April 22-28 2013

Here is where Laura and Shaun will post their food journals and photos of their progress from week to week. The goal of this journal is to help us keep track of good and bad choices as well as let everyone join us on this journey to eating in a more healthy fashion over a period of time.

Shaun’s Food Journal

  • April 22nd:
    • Breakfast: None
    • Lunch: 1 peanut butter jelly sandwich on wheat bread. 25 ranch potato chips
    • Dinner: 2 cups grilled chicken. 2 cups rice. 2 cups black beans, onions and stewed tomatoes.
  • April 23rd:
    • Breakfast: 3 cups Crunchy Nut Cereal. 2 cups Skim Milk.
    • Lunch: 1/2 cup Grilled chicken with rice and black beans, onions and stewed tomatoes.
    • Dinner: 2 cups Rotisserie Chicken. 1 Cup Green Beans. 1 Cup Mac and Cheese. 2 Hawaiian Rolls
  • April 24th:
    • Breakfast: 3 cups Crunchy Nut Cereal. 2 cups Skim Milk
    • Lunch: 1 peanut butter jelly sandwich on wheat bread. 25 ranch potato chips
    • Dinner: 4 Turkey Tacos with Corn shells. 2 tbs salsa. 1.5 cups black beans, tomatoes and onion.
    • Snack: 1 Kiwi
  • April 25th:
    • Breakfast: 3 cups Crunchy Nut Cereal. 2 cups Skim Milk
    • Lunch: 2 oz. Sauteed Chicken with Onions. 1.5 cups mixed veggies.
    • Dinner: 1.5 Pork Chops, 2 cups Green beans, 2 cups couscous.
  • April 26th:
    • Breakfast: 3 cups Crunchy Nut Cereal. 2 cups Skim Milk
    • Lunch: 2 oz. Sauteed Chicken with Onions. 1.5 cups mixed veggies.
    • Dinner: 1 peanut butter jelly sandwich on wheat bread. 25 ranch potato chips
    • Snack: 1 strawberry pushpop cupcake. 1 kiwi.
  • April 27th:
    • Breakfast: 3 cups Crunchy Nut Cereal. 2 cups Skim Milk
    • Lunch: 1 Large Salad with 2 cups Grilled Chicken. 1 package of lite ranch dressing.
    • Dinner: Grilled Chimichurry Seitan Wrap -28 grams of protein with cilantro lime dressing in a whole wheat wrap with seasonal veggies & chipotle sauce. 1/3 corn tamale with caramelized onions, roasted peppersĀ  & pico

    • Breakfast: 1pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: Orange. Strawberries. 2 pieces of peanut butter toast. Hummus with whole grain tostitos.
    • Dinner: Grilled Chicken. Rice. Black beans with onions and stewed tomatoes.
  • April 23rd:
    • Breakfast: 1 pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: Banana. Strawberries. 1 1/2 cup Chicken with Black beans, onions and stewed tomatoes.
    • Dinner: Rotisserie Chicken. Green Beans. Mac and Cheese.
  • April 24th:
    • Breakfast: 1pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: Apple. Pear. Turkey Sandwich. Hummus. Whole Wheat Tostitos.
    • Dinner: Turkey Tacos. Black Beans with onions and stewed tomatoes
  • April 25th:
    • Breakfast: 1pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: Chicken Veggie Bowl. Apple. Pear. 1 Slice of wheat toast with peanut butter.
    • Dinner: Pork Chops. Couscous. Green Beans.
  • April 26th:
    • Breakfast: 1pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: Chicken Veggie Bowl. Apple. 1 Cupcake Pushpop.
    • Dinner: Strawberries. Celery. Hummus with Wheat Tostitos.
  • April 27th:
    • Breakfast: 1pkg Kashi Cinnamon Honey Oatmeal w/Pecans and 1 Banana. Coffee(black)
    • Lunch: 3 pieces of peanut butter toast. Hummus with Celery
    • Dinner: Pecan almond encrusted Seitan served with mashed potatoes, and kale & mushroom gravy
  • April 28th:
